One beautiful thing about quiches is that you can pretty much make them any way. Because of this, they're perfect for those of us who like to experiment with our seasonal produce. This is a recipe I came up with about four years ago, and it's been a part of my summer menu for years. The asparagus, peaches, and figs are available for seasons, but the chanterelles make it well worth the wait.
This my favorite nibble. I love the combination of soft, buttery, nutty crostini, the roasted, sweet, and tangy peaches, and then the mineral-rich succulent chanterelles. I make this dish in the rustic skillet and my family won't stop talking about it. It's a total crowd-pleaser.
Though the ingredients may appear a bit serious for a fun summer lunch, I guarantee your friends will love this asparagus quiche. It's so good I often get asked for the recipe. I've found that filling the pie ring with uncooked beans makes it easier to remove the cobbler, but don't worry about that part: it's just a quiche, after all. If you don't want a crust, you can make the filling without. This recipe will definitely convert those who don't like baked quiche. It's that simple.
