If you have an older version of Java Edition, you could get into the minecraft.net web server from your browser, navigate to app/minecraft/config/mcversion.json, and change the latest version number to the version of Minecraft you're playing. After that, you should be able to launch into 0.31 from your version of Java Edition, and it should work perfectly well from there. The problem is that the 0.31 version of Minecraft has a new, longer version number, which makes changing it manually like this harder, though I suspect Notch may have a backup of this file somewhere as he has used the launcher a lot in the past. What's even more annoying is that you may have to reset the version number for every update you make to the game, as Minecraft's current system of setting the version number every time a patch is released has been changed in Java Edition. This means that every time you update the game, it will start with the new version number, and reset the value in the config file to the previous version number, so you would have to manually change the new version number to the old value before playing if you ever want to play a previous version of Minecraft. To prevent this from happening, you may have to make your own config file for 0.31, which will be a simple text file with the old version number you want.
I've tested the game using a combination of the new Android launcher and Fiddler, and while the game runs perfectly, the Android app doesn't seem to download the latest version of the game. Possibly because it doesn't properly parse the proxy software Fiddler, but I don't know. This is the first time I've tried any of the new launchers, but it seems like it's very likely that it can't handle Fiddler's traffic and will crash. I have made a backup for Java Edition's config file, and am testing the Android version of the game as well, though I don't have much hope of it working.
As for me, I currently only have the Java Edition of the game installed, though I have tried to play it on Android with Fiddler, and it seems to be able to open the new launcher at first, but then I get an error saying that the instance of the app is not registered with the Minecraft.net server. I may have to use a 3rd party launcher to start the new versions.
Indev versions are identical to the old versions of Minecraft for Bedrock, except for the fact that the server name is changed from Minecraft to Indev. If you are playing on a Bedrock version of Minecraft, you will have to download and install the Bedrock edition of Minecraft Indev from the link above. You will also need to download the Java Edition of the indev plugin above to play the indev version of Minecraft.
Java Edition players will have to use a Java Plugin to activate the indev version. You can download the plugin here. It will not work in older versions of Java, so players of Java 1.7.X and 1.8.X will be able to download the plugin, install it, and then activate it, but they cannot use it without updating to the latest version of Java. The plugin will be usable for the lifetime of the indev version of Minecraft, so once you update to the latest version of Java, this plugin will no longer work and you will have to download the plugin again, or else visit https://www.minecraft.net/download/java/ and download the latest version of Java. 827ec27edc
